Our Honey

by Susanna Tamaro

I have always been an animal lover and, among these, bees are definitely amongst the most fascinating! I have several hives that I take care of with Alessia, who manifested my same interest for insects, since she was little. The hives are all located all around my house, a few miles from here, and have 70.000 square meters dedicated solely to them.
What does that mean, “dedicated solely to them”? It means that we cultivate a large number of diverse types of flowers, to offer our beloved bees a varied diet, along with allowing them the use of a spring water pond full of water lilies, on which they can land safely and drink.
Luckily for us, there are no cultivations that require toxic treatments close to our business, only woods and fields. susanna pic2In fact, there are no longer free bees in Italy, because the number of illnesses that plague them is so high that, without the aid of man, a hive will not live longer than three years.

Alessia and I cultivate our beloved bees with natural products only. Further, in our little business, we do not use any chemical products and all activities are regulated by the idea that protecting and defending entomological biodiversity is the most important thing of all. Breeding and protecting bees, fighting for their survival is something that makes us proud and gives our work, as well as our lives, a profound purpose.
At the moment, we produce two types of honey, one made during spring time and one during the summer. In the former, the dominant trait is that of the acacia, followed by rosemary, red clover and borage. On the other hand, the summer honey contains linden, chestnut tree, lavender, blue bottle, borage, mallow, horehound and thyme, as well as other plants, such as cosmos and ipomoea plants, which grow on the outside walls of our house.
Technically, the first can be defined as ‘acacia honey’, the second as ‘wildflower’.
I prefer the more affectionate definition of ‘garden honey’. Indeed, a garden has the ability to express the personality of its owner, through its cultivated plants. This is even more the case when it comes to honey. The flowers that my bees feed off of are ones growing around me that I have picked with great care. The work of the bees transforms this pallette of a thousand colours and scents, one you will be able to taste in our honey.
